For Eggplant Lovers Everywhere


 
 

I totally hate the name eggplant. 

It makes me want to move to Quebec so I can call it la plante aubergine.

But I do love the darn things

AND I found out that in some places they are called

Mad Apples!

 

Google didn't specify exactly where those places are.

Sadly one of them is not boring old Sobey's, where I shop.

 

Anyway, I found this recipe by my favourite vegan cook,
Laurie Sandowski, in my mail box this week and thought,

"YUM!"

 

Ms Sandowski calls this recipe Imam Bayildi (Turkish Stuffed Eggplant)

I call it Mad Apples in a Pot.

Mmmm....looks delicious, Francie! Thanks for sharing this. I love eggplant. Well, maybe not the name, but certainly the vegetable. There are so many ways to cook it, and so many delicious results. Last year I had some planted in my garden, and plan to do the same this year.

I might have drooled a little. And I'm sooo making Turkish Stuffed Mad Apples for lunch or dinner today. This is sooo good.

Oh, and you can always choose to call eggplants by their Spanish name: berenjena. It sounds like something that should be danced, doesn't it? lol

Berenjena! Thanks Magaly - somehow it seems the right name, the name the plant sings under the full moon. (I've heard that is how some native South Americans identify certain plants).

I have always WANTED to like eggplant....in theory I do. In actuality I can't stand the stuff.

Yum..I totally love them..eating them..and growing them too..and the color is inspiring to me! Beautiful recipe. Love the mad apple name..how cool is that!!It's a keeper!
